Oven Steak Fries

David made these for the first time this past winter, and oh my gosh!  They are SO good!

Oven Steak Fries


3 tbsp olive oil
1 tsp paprika
1 tsp ground cumin
1 tsp salt
1/2 tsp black pepper
4-6 potatoes, cut into wedges


1.  Preheat oven to 400 degrees.  Combine oil, paprika, cumin, salt, and pepper in a large bowl.  Place potato wedges in the bowl and coat with spices.

2.  Transfer potato wedges to a large non-greased baking sheet (do not overcrowd).

3.  Bake until the potato wedges are golden and crisp (about 40 minutes).  Serve immediately!

We dip them in ketchup, ranch dressing, or sour cream with some shredded chedder cheese sprinkled on top.  Yum!

This a beautiful addition to our Spring / Easter book bin.

Inside is the delightfully written and illustrated story of the blessing of the animals.  In the book, the age-old tradition of the blessing of the animals takes place the day before Easter (Holy Saturday) in Los Angeles's Latino community.

The author shares three songs that are charming customs of the Spanish community.  (I played them on the piano for Miss Clementine.)

The blessing of the animals tradition actually remains today in some parts of the country, including mine.  Just last year, our priest (who was born in Mexico) held a blessing of the animals on Holy Saturday for members of our parish.

This makes such a wonderful addition to our Easter books and is now easily one of our top favorites!

Stan the man and David went camping with the Troops of St. George this past weekend.  The camp out consisted of bow fishing up on the Red River.

Prom 2017

All dressed up and somewhere to go!

They always go as a group of friends.

Prom was early this year since the venue needed to be moved to accommodate almost 1,800 homeschool kids.  Imagine that many!

With a change in venue came limited availability.  So it was in early March for this year only.

Of course they still had an amazing time!

She's having a pretty amazing senior year.  (And she only has 7 weeks left.)

Sweet 16!!

This happened earlier in the month!

 I canNOT believe she's 16 already!

She spent her spring break week taking a Red Cross Lifeguard Certification Course and passed.  Woo Hoo!

So we now have 2 certified lifeguards in the house :)

Turning 16 means a big birthday party.  We are planning on celebrating her Sweet 16 with a swimming party this summer for her and all of her friends.

So proud of this girl!!

We love you, Emma, with every inch of our being.

More Catching Up with a Special Prayer Request

In the midst of everything else going on, my mom has had some health issues, and we are at the point where I am now asking you to put her (Loretta) on your prayer list.  Please and thank you. 

Getting right to the point, my mom has lung cancer and will have the tumor surgically removed on March 29.

I hadn't mentioned anything specific because only up until late yesterday did we know the "plan of action".

It is encapsulated.  It is malignant.  It is stage one.  Cancer sucks.  I lost my father to cancer.  But if there is any good here, the fact that they caught it early and it is encapsulated is the good.

She has never smoked.

She is brave!  She is a widow and even though she is brave, fear can creep in.

So, yes, please join us in prayer.  I have been praying a novena to St. Peregrine since early January.  He is the patron saint of cancer patients.

There is also some less serious news for Stan the man.  He has begun his extensive, orthodontic work.

We knew this was coming, and the kids' dental insurance does not cover orthodontics.

I am grateful that we live close to such amazing medical schools!

Stan was accepted as a patient candidate into Texas A& M / Baylor school or orthodontics in Dallas.  We started the application process to be a patient candidate last May, and earlier this month, Stan began his medical treatment.

Going here, rather than going to a private practice, will save us thousands.  Thousands!

Inhale. Exhale.

Sometimes, the chapters in our lives are so fast-paced, it can be hard to remember to breathe!  That's how it has been our neck of the woods for the past month.  I think things are going to slow down now, at least I hope so.

Here's what we've been up to ::

Penny, (Ester's horse), has a new room mate, Pistol.  It was so fun going out to meet him the first time.

Pistol, the paint horse, belongs to the land owners where Penny is kept.

And this happens when your daddy barters with a customer...

A Honda Metro, 10 years old, with only 1200 miles on it.  Sweet!

Fat Tuesday was c.r.a.z.y. here preparing for the painters to arrive the next day.  It was late at night, but we got our celebration on with these...

Two out of three sisters flew in for a quick weekend to celebrate my birthday.  (I'm 48 y'all!!)

We drank wine, ate delicious food, and laughed and laughed and laughed (till I about wet my pants laughing)!

Great memories!

Miss Sally and Ester attended the Dallas Catholic Youth Conference last weekend.  They really enjoyed it and gained so much from it spiritually.

One really amazing part was that Miss Ester, for the first time, got up and played for others.  Like hundreds of teenagers.

She had memorized 2 songs; Truce (Twenty One Pilots), and The Last Leaf Falls (Lucas King).  Oh my gosh!  That song is gorgeous!!

I ADMIRE her COURAGE (insert big, red heart)!

And there's been more.  So much more.  I'll save it for another post though.
