I found this delicious filling recipe and look forward to using it again in the future.
Peanut Butter Filling
1 cup peanut butter
1 tsp vanilla extract
2 1/2 cups confectioners' sugar
8 TBSP milk
1. Beat the peanut butter and vanilla on medium speed for 2 minutes. Add a cup of the confectioners at a time, slowly beating in-between until smooth. Add the milk, a little at a time, beating until it reaches a spreadable consistency. (Note: It still will remain thick.)
2. Evenly spread the filling over the bottom of the cake using an icing spatula to mold it into shape. (Note: this is not the consistency of butter cream frosting so you need to manipulate it a little differently.) Top with the remaining cake.
Oh my goodness. So delicious!
