Carrot Pecan Wild Rice

Another festive (and light) addition to our holiday menu this year!   The raisins and orange zest that are added to this dish make it taste better than imagined.

Carrot Pecan Wild Rice


1.5 cups of wild rice

(2) carrots, peeled and cut into 1/2" rounds

1/4 cup raisins

1/4 cup chopped pecans

zest and juice from 1/2 orange

salt & pepper to taste

1/4 cup chopped parsley

4 TBSP melted butter


1.  Boil rice in 4.5 cups water to a boil then simmer for 40 minutes (or according to package directions.)

2.  Slice 2 carrots into 1/2" rounds.  Simmer carrots 5 to 7 minutes until tender.

3.  Combine rice with carrots in a large bowl.  Add raisins, zest and juice from orange, salt & pepper to taste, chopped parsley, and melted butter.

4.  Stir and serve
