Do you like like banana bread? These tasted just like banana bread.
In addition, they were a lot more dense than the boxed pancake mixes (which kept our hunger at bay for a longer period of time), plus a whole lot healthier!
1 1/4 cup old fashioned oats (* I had quick oats and it was just fine.)
1/2 cup whole wheat flour
2 tsp sea salt
1 1/2 cups of almond milk
2 ripe bananas
1. Except the bananas, blend all the ingredients in a blender. Now add the bananas and continue to blend (in blender) until the bananas are smooth.
2. Pour onto a hot griddle (lightly oiled) and cook. Once you see bubbles appearing, flip over to cook other side.
Servings :: A dozen medium-sized pancakes for 4.
**I made two batches in order to feed my family of 7 (with no left overs). Also, because of the density of the batter, the inside of the cooked pancake is heavier in the middle.**
They were definitely yummy and a little more expensive to prepare. As far as I am concerned though, the health benefits outweighed the overall cost.
