Classic Elegance



Nothing says classy as much as a white cake!

White Cake

Ingredients:

2 3/4 cups cake flour
1 2/3 cups sugar
1 tbsp baking powder
3/4 tsp salt
2 sticks (1 cup) butter, softened
4 large egg whits
1 large egg
1 cup milk
2 tsp vanilla

Directions:

1.  Preheat oven to 350 F.  Lightly grease the bottoms and sides of two 8-by-2 inch or 9-by-2 inch round cake pans.

2.  Mix all of the dry ingredients slowly to blend.  Add the butter and mix until crumbly, like fine sand.

3.  Add egg whites, one at a time, then the (1) whole egg, beating well and scraping the down the sides and bottom after each addition.

4.  Whisk the milk with the vanilla and add this mixture 1/3 at a time to the batter.  Beat 1 to 2 minutes after each addition, until the batter is fluffy.

5.  Pour batter into prepared pans and bake for 25 to 35 minutes for the round layers, 36 to 42 minutes for a 9-by-13 inch sheet cake, or 18 to 20 minutes for cupcakes.  A toothpick inserted in the center should come out clean.  Remove cake from the oven and let cool, then gently turn out onto a rack.

**You can take  a short cut by preparing a boxed mix from the grocery store.**

6.  Frost with your choice of frostings and fillings.  Top with shredded coconut if desired.


Vanilla Buttercream Frosting with Strawberry Filling

Frosting Ingredients:

2 sticks (1 cup) butter, softened
3 cups powered sugar
2 tsp vanilla
1 tbsp cream

Directions:

1.  Combine butter and powdered sugar on low speed until the sugar and butter are incorporated, then beat on high for 2 minutes.

2.  With the mixer still running, add vanilla and cream.  If the frosting is too thick, add up to 1 more tbsp cream until it reaches desired consistency.  Makes enough for 1 (2-layer) cake.

Strawberry Filling:

Puree 1 1/2 cups of strawberry jam.  Spread the jam evenly between the cake layers, then frost the top and sides with vanilla buttercream.

  2. Hi Patty! White cake is my husbands favorite cake. I usually use a box mix, but I'm sure this is way better. I'll be back around Father's Day to copy this. He really likes filling too (I don't so I never put it in there...but it's Father's Day!)

  5. You've got it right, elegant indeed. I'll have to try this one and a new buttercream recipe is always good to give a try. Now I just need an occasion......end of the school year cake?? Maybe with margaritas? ;)
