Tortilla Pie

This is a new Tex-Mex recipe that we recently tried.  If you are a fan of Tex-Mex, this was quick to prepare, and a yummy edition to our Meatless Friday rotation!

Tortilla Pie

Ingredients ::

1 cup frozen corn kernels

2 green onions, thinly sliced (I substituted onion powder.)

1 tsp ground cumin

1 1/2 cups salsa

1 (15 oz) can of black beans, rinsed and drained

4 burrito-size flour tortillas

1 (8 oz) package shredded Mexican cheese blend

2 tbsp chopped fresh cilantro leaves

Directions ::

1.  Preheat oven to 450 degrees F.  Spray large cookie sheet with cooking spray.    (I used parchment paper instead.)

2.  Spray 12" skillet with cooking spray; place over medium heat.  Add frozen corn, green onions, and cumin; cook 3 minutes or until corn thaws.  

3.  Remove skillet from heat; stir in salsa and beans.

4.  Place one tortilla on a cookie sheet; top with 1 cup bean mixture and sprinkle with cheese.  Repeat, starting with tortilla, to make 2 more layers.

Top with remaining tortilla and cheese.

5.  Bake pie 10 minutes or until heated through.  Carefully transfer pie to cutting board (I used a spatula); sprinkle with chopped cilantro.  With sharp knife (I used a pizza cutter), cut into wedges to serve.

*The cutting into wedges part is REALLY messy.  Just go slow and don't expect perfectly sliced pieces.*

When I made this recipe, I doubled everything and had 12 servings.  Some kids were full after one piece, some had more than one piece.
