Homemade Caramel Corn



(This recipe is my mother in law's and now David makes it for us as a special treat.)



Caramel Corn

Ingredients:

7 1/2 -8 quarts popped corn  (Enough to fill a large roaster)
2 cups brown sugar
1/2 cup white corn syrup
1 cup butter
1 tsp salt
1 tsp baking soda

Directions:

1.  Bring to boil the sugar, syrup, butter.  Continue to boil for 3 minutes.
2.  Add baking soda and salt.  Be careful...it will foam.
3.  Pour mixture on popped corn in a roaster and stir to coat.  Work quickly.
4.  Bake 1 hour in 200 degree F. oven stirring every 15 minutes.
