Blueberry Yumminess

I posted this Creamy Blueberry Pie recipe last year, but without a picture of my own creation.

So here it is...fresh out of the oven!

It goes fast in our house!

Creamy Blueberry Pie

3 c fresh blueberries
1 (9 inch) deep dish pie crust
1 c white sugar
1/3 c all-purpose flour
1/8 teaspoon salt
2 eggs, beaten
1/2 c sour cream
1/2 c white sugar
1/2 c all-purpose flour
1/4 c butter, softened

1.  Combine 1 c sugar, 1/3 c flour, and salt.  Add eggs and sour cream, stirring until blended.

2.  Place (thawed) blueberries in pastry shell, and spoon sour cream mixture over berries.

3.  In another bowl, combine 1/2 c sugar and 1/2 c flour.  Cut in butter until mixture resembles course meal.  Sprinkle this mixture over sour cream mixture and berries in the pie shell.

4.  Bake at 350 degrees F (175 degrees C) for 60-70 minutes, or until lightly browned.  Ovens variate.  I have used a pie crust protector shield in order to bake the pie longer.  If you don't have a protector, you can use small, rectangular pieces of tin foil to cover and protect the edges of the pie.

**Refrigerate left overs.**

I serve this warm with vanilla ice cream or chilled the next day.  Both ways are yummy!
