Checking off our list...

...one thing at a time. 

The summer bucket list...how is yours coming along?  Any changes or new additions you want to share?

We have checked off some more from our list.


* Try one new recipe each week during summer - check.  (BTW, this can be really hard!)

Any pineapple lovers out there?  You may have tried this next one already. 
Pineapple Scallop


(So good that I forgot to snap a photo of it before we dug in!)

Ingredients:

6 slices of stale cubed bread
1 c butter, melted
3/4 c milk
2 c white sugar
20 oz pineapple tidbits, drained
2 beaten eggs

Directions:

Mix bread and melted butter in bowl.  Mix the remaining ingredients and add to bread mixture.  Pour into an 8" x 8" well-buttered glass dish.  Bake at 350 degrees F for 45 minutes.  This is yummy served warm and can even be served as a side dish for a ham dinner.

All of my kids loved it.  (Even my non-pineapple lovers.) 

 He had two bowls in a row.





* Sit outside and watch a night sky light up with with the promise of a thunderstorm   ( so so beautiful ) - check.

* Grow sunflowers  (Ester's are just starting to awaken from their slumber) - check.



* Visit with neighbors outside until dark, while kids play, sweat, and go home happy and tired - check.

  5. My Mother in law make a pineapple souffle that I imagine is the same recipe. O so yummy!

    Have enjoyed reading about your travels (above) in Texas too.
