Catch Me If You Can!




Chocolate Gingerbread Cookies

This is a new recipe the girls made and it was really yummy!

Ingredients:
1 1/2 c Semi-sweet chocolate chips
2 3/4 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp ground cinnamon
3 tbsp butter or margarine
3 tbsp sugar
1/2 c molasses
1/4 water

Directions:

1.  Combine flour, baking soda, salt, ginger, and cinnamon in bowl.  Set aside. 

2.  Melt 1 1/2 c choco. chips in microwave safe bowl. Start at 1 minute on high. Stir. Repeat at 15 sec. intervals until melted.

3.  Beat butter and sugar in large bowl until creamy. Beat in molasses and melted chocolate.

4.  Gradually add in flour mixture alternating with water.  Beat until smooth.  Cover and chill for 1 hr, or until firm.

Lightly flour service and rolling pin.  Roll half the dough to 1/4 inch thickness.  (You may need to first kneed the dough in your hands to warm it slightly.)


Bake at 350 degrees F for 5 to 6 minutes or until edges are set but centers are still slightly soft.

Decorate with royal frosting or butter cream frosting.  You can top with raisins or candies.

  4. That recipe sound delicious! I have to admit the last couple of years when we have done gingerbread decorating we have used store bought!! We hoping to decorate this week.

  5. These cookies were awesome! When they disappear almost instantly, you know it is a good recipe.

    Jen~ I used store bought...put it into a ziplock...cut a small corner off...instant decorator's bag. Another mom had royal icing at the party. She just put it into an empty plastic ketchup container and it could be squeezed out.
